Remember the era of steak houses? Western Sizzlin,' Ponderosa, Golden Corral, and K-Bob's?


Those were the days! John Wayne and Clint Eastwood brought in an era that made even dinner an adventure. One throwback from those bygone days is the hearty, loaded baked potato and a juicy steak, but there was more than that on the menu.


One favorite of mine was the Santa Fe Chicken, seasoned to a hilt and dripping in melted cheese, fresh bacon, and green onions!


The wonderful thing about this recipe is that it is incredibly easy! Need a fancy dinner for guests but afraid to mess it up? You cannot mess this up! Pop your freshly washed and forked potatoes in the oven on 400 for an hour and whip up this quick dish!


Santa Fe Chicken Ingredients

  • 3-4 chicken breasts, one per person, sliced to ¾ inch depth

  • 1/8 cup Whiz Bang or Fajita seasoning

  • 1 cup shredded medium cheddar

  • ½ cup precooked, crispy, crumbled bacon

  • ¼ cup diced green onions


Santa Fe Chicken Directions

  1. Preheat the oven to 350 degrees.

  2. Add the chicken breasts within a glass baking pan.

  3. Season well with the Whiz Bang or Fajita Seasoning on one side of the breasts.

  4. Top with shredded cheese, bacon, and green onions.

  5. Bake for 25 minutes on 350 degrees.

  6. Serve with baked potato and side salad!
