Sometimes the most refreshing sensation in the world is simply a sandwich and chips! I recall my first time away from home as a nineteen year old college student.
As part of my tuition and housing, I was blessed with Meal Card where I could eat at the cafeteria or various fast food joints around campus. The meals were pretty decent but by my third month in of eating out at every meal, I had an incredible urge for just a sandwich!
It was a taste of familiarity amidst the foreign, simplicity at a time when everything seems so complex. I still remember the crunch of the lettuce and tomato juice spurting down my chin!
Since that time, I've branched out a bit from ham, bacon, lettuce, and tomato! This recipe is one such excursion into the sandwich-y wild side! It's simple... incredibly simple... but is a great way to eat clean on a budget!

Cranberry Chicken Salad Sandwich Recipe
Servings:
Serves 1
Ingredients:
1 large croissant (or 2 small), slice lengthwise
1/2 cup precooked chicken (can be fried and sliced or from the whole chicken recipe with a dash of Whiz Bang seasoning)
1 Tbs Dijan mustard
2-3 thin-sliced dill pickles, sliced lengthwise
3-5 leaves arugula
1-2 Tbs freshly made Touch o' Spice Cranberry Jelly/Sauce
Directions:
Combine the ingredients on the opened croissant.
Serve! Note, this is best served with all ingredients cold!
Pair with homemade or organic potato chips!
